100% Chenin Blanc

The fruit is harvested at the coldest part of the day, cold crushed to press and skin contacted for 6 hours before gentle pressing. The juice is cold settled and racked to old French oak barriques for fermentation. When fermentation was complete, the wine was then aged on it’s lees with gentle battonage for 7 months before blending and bottling.
Water resources were well replenished over Winter with low enough temperatures to aid dormancy. The growing season began with a cool and relatively dry spring. Summer turned on at the right time with warm even temperatures, setting the scene for
gentle and consistent ripening across all varieties. It was another great vintage, with the seasons all playing their part. A lack of Marri blossom this year meant nets covered the region to keep the birds at bay.
White pear, shaved almonds, wet granite and honeysuckle.
Sheer tendrils of white fruit tannin, guided by a focused array of stone fruit flavour and coating natural acidity. The finish is persistent yet quenching, awash in tones of sea spray, green apples and subtle hints of hay and freshly whipped cream.
Enjoyed for its freshness now or cellar for up to 8 years for further complexity.
